Rachael's Culinary Arts Private Class is not a culinary school. We accept no more than four students at a time, deliberately. This is a non-negotiable commitment — because every student deserves to have their hands corrected, their seasoning questioned, their plating personally reviewed by the instructor. That is impossible in a class of twenty.

You will learn to cook with confidence, precision, and creative flair — working with a personal instructor who teaches no more than four students at a time. No prior culinary experience is required.
Over six weeks you will work through the essential pillars of continental cooking: stocks and mother sauces, classical knife technique, heat management, protein cookery, and professional plating. The first three weeks focus on morning-to-afternoon sessions built around practical drills. The final three weeks move into full dish execution and refining your personal style.
A comprehensive, deep-dive introduction to Nigerian cuisine from across all six geopolitical zones of the country. Designed for beginners with little or no prior experience, this programme takes students from complete novice to confident, expressive Nigerian cook. You will not just follow recipes — you will understand the logic of Nigerian flavour.
Participants explore traditional and contemporary Nigerian dishes — soups, one-pot rice specialties, street food classics, festive dishes, snacks, and Nigerian beverages. The programme is structured to develop your palate, your confidence with native ingredients, and your ability to cook for family and guests with real distinction.
The most artisan of our three programmes — and perhaps the most rewarding. This course covers both French and Nigerian pastry traditions side by side, giving students a unique dual vocabulary: the precision and elegance of classical French patisserie, and the distinctly West African flavour of Nigerian pastry making. A beginner-level course that produces results far beyond what beginners usually achieve.
You will make croissants, tarts, choux pastry, and mousse from scratch. You will also work with Nigerian pastry traditions — from chin-chin and buns to native sweet breads, puff pastry interpretations, and indigenous flavour-infused desserts. By the end of five weeks, your pastry table will speak two languages fluently.
A comprehensive, hands-on introduction to the art of cake baking and decoration. Designed for beginners with little or no prior experience, this programme takes students from basic baking principles to confidently creating beautiful celebration cakes with professional finishing techniques.
Participants will learn how to bake a variety of cakes, master fillings and frostings, and develop practical decorating skills using buttercream, fondant, piping, and modern cake styling methods. This programme is structured to build your confidence, creativity, and ability to create cakes for family events, celebrations, or even commercial baking opportunities.
